This homemade fresh and rich, potent ginger simple syrup is just the sweet and zingy ingredient you need for baking, cocktails, mocktails, and more. You only need ginger root, sugar, and water to make this syrup and it will last as long as 2 weeks in your fridge. My favorite way to enjoy it is with sparkling water or club soda over ice for a fresh ginger soda at a 1:6 ratio.

Only three ingredients: Unlike store-bought ginger syrups that have a zillion weird ingredients, this only has fresh ginger, sugar, and water.
🧾Ingredients in This Recipe
Fresh ginger – You must use fresh and not powdered ginger as powdered ginger is WAY too potent for this syrup. Peeling the ginger is optional too, but the skin will give the syrup a slightly darker color, so that’s something to consider. I usually leave it on.
Sugar – I use white granulated sugar as it dissolves consistently over the heat and gives a light color. You can also use brown sugar but the flavor will be slightly more caramel-like and the syrup will be darker in flavor, which is also delicious. Other sugars like demerara and turbinado also work great in this recipe.
Water – You can use any drinkable water. I use filtered water for this syrup because it doesn’t come to a boil to purify the water in this recipe.

👩🍳 How to Make This Recipe
Add the sugar and water to a large saucepan. Turn the heat to medium, and stir until the sugar is completely dissolved in the water. Let it come to a light simmer, but not a full rolling boil.
Remove the syrup from the heat. Add in the chopped pieces of ginger and allow to steep for 5 minutes.
Add all the contents to a high-speed blender and blend for 30 seconds.
Strain the ginger through a fine-mesh strainer and pour the simple syrup into a sealable container. Store in the fridge to keep it fresh and use for up to 2 weeks.

You can adjust the amount of fresh ginger root to achieve your ideal flavor. If you only want a hint of ginger flavor in the syrup, reduce the quantity you steep.
