🧾 Ingredients in This Recipe
Ginger simple syrupOR fresh ginger root and granulated sugar – Use fresh ginger and granulated sugar, brown, turbinado, or demerara. You can even use honey in this recipe.
Water – You can use any drinking water including tap, bottled, or filtered.
Lemons – About 4 lemons will yield the perfect amount of juice for this recipe.
Ice – Any ice you have to serve, or you can leave this out if you like.

Ginger Simple Syrup
Add your sugar and water to a large saucepan. Turn the heat to medium, and stir until the sugar is completely dissolved in the water. Let it come to a light simmer, but not to a full rolling boil.
Remove the simple syrup from the heat. Add in chopped pieces of fresh ginger (skin on) and steep for 5 minutes.
Next, add all the syrup and ginger to a high-speed blender and blend the whole thing for 30 seconds.
Then, strain the ginger through a fine-mesh strainer and pour the simple syrup into a sealable container. You should store it in the fridge to keep it fresh. It’s good to use for up to 2 weeks. Or use it right away for your lemonade!
Spicy Ginger Lemonade
Pour the ginger simple syrup into your pitcher.
Cut each of your lemons in half and squeeze out as much juice as you possibly can using a fork or a juicer. Add it to the pitcher with ginger simple syrup.
Add the water and mix well to combine.
Add ice to your glasses just before serving.

When I was recipe testing my ginger syrup, I found that recipes that only included a steeping step didn’t produce quite the potency that I was looking for. By putting whole pieces of ginger into the syrup and blending it before straining, you get an intense gingeriness that you couldn’t achieve with just steeping.

Use freshly squeezed lemons: Bottled pre-squeezed lemon juice won’t be as tasty
Add garnish: Add slices lemons, fresh mint, and plenty of ice for the ultimate lemonade drink.
Chill your glass: Pop your serving glass in the fridge for a few minutes before pouring the lemonade for an icy cool lemonade.

Ginger Lemon Mocktail: Use sparkling or seltzer water in place of plain water for a fizzy and fun mocktail.

Notes
You can amp up the ginger flavor without adding more sweetener by adding up to 4-oz. of the fresh ginger. I find it to be perfect at 2-oz., but if you’re looking for more, feel free to go up to double.
