Lavender simple syrup is a helpful ingredient to have on hand for making floral cocktails and calming hot beverages. With only 3 ingredients and a small effort, I’m teaching you how to make it at home.
Once it’s ready, you can use your sweet and subtle syrup in mocktails, cocktails, or even the famous Starbucks copycat, an Iced Lavender Cream Oatmilk Matcha Latte.
🌟Why You’ll Love This Recipe
Versatility of lavender – Lavender is THE secret to elevating teas, coffees, cocktails, and baking recipes. It has a light, floral flavor that pairs equally well with citrus flavors and sweet flavors like vanilla or honey. Plus, the aroma of lavender is soothing like nothing else!
Super easy with minimal effort – Making homemade simple syrup sounds like it would be more complicated, but heating the sugar and the water is the most work you’ll have to do. This recipe tastes gourmet without even trying.
Countless ways to use this syrup – From whipping up an Iced Lavender Matcha Latte to mixing it with vodka and lemon juice for a refreshing lavender lemon cocktail. It’s a much more delicate flavor than a lavender extract so it works well in drinks. You can also try it in this simple Lavender Matcha Latte, or a London Fog Latte.
🧾 Ingredients in This Recipe
Lavender – I’m using fresh lavender flowers which you can find at the grocery store. Dried lavender will also work, but my preference is for fresh.
Sugar – You can make this syrup with almost any sugar available. I would recommend granulated or cane sugar for ease, but this recipe also works with turbinado, brown sugar, or even honey. Note that a darker sugar will give the syrup a darker flavor.
Vanilla Extract – This is an option addition to make this simple syrup even better. The warm sweet flavor of the vanilla extract complements the floral lavender perfectly.

✨ Pro Tip ✨
I like to add a dash of lavender simple syrup to my Earl Grey tea. The bergamot in the tea tastes incredible with the floral lavender flavor.
👩🍳How to Make This Recipe
Add the sugar and water to a large saucepan. Next, turn the heat to medium, and stir until all the sugar is completely dissolved. Let the syrup come to a light simmer, but not a rolling boil.
Once all sugar is dissolved, remove the syrup from the heat. Add the flowers from two stems of fresh lavender (3 tablespoons fresh or 2 tablespoons dried) and optional vanilla extract. Let steep for one hour.
Use a fine mesh strainer or cheesecloth to strain the lavender out of the syrup.
Transfer your lavender simple syrup to a sealed container and keep in the refrigerator until ready for use. Keeps for up to 1 month.
💜 Creative Ways to Use Lavender Syrup
Cocktail or mocktail mixers: This simple syrup works double duty to provide delicious lavender flavor and sweetness to your alcoholic or non-alcoholic drinks. It’s great with bubbly water and some lemon.
As a sweetener for tea and coffee: Sweeten your hot or iced coffee and tea with simple syrup instead of granulated sugar, honey, or artificial sweeteners.
To keep cakes moist: Brush syrup onto cake layers to keep them moist. This is especially useful for layered cakes that will be stored before serving.
