    This borage fizz mocktail has a gentle, herbal sweetness from pairing borage-infused simple syrup with sparkling water and lemon to make a delightfully fresh mocktail – cheers! Inspired by the classic gin fizz, this mocktail takes the inspiration to new heights - cheers!

    This mocktail is vegan because it swaps out the traditional egg white for aquafaba, but you can also use an egg white.

    Why this Recipe Works

    Make the borage simple syrup once, and enjoy this mocktail with extreme ease all summer long. It's a no-fuss easy mock-tail to make with only a few ingredients. You can use a jar instead of a shaker, and a strainer instead of a cocktail strainer.

    The slightly sweet, herbal taste from the borage simple syrup pairs beautifully with the lemon, creating a gentle-tasting lemonade as the base for this mocktail.

    The fun fizzy part of the mocktail comes from the sparkling water. This complements the sharp acidity from the lemon juice and the sweetness of borage simple syrup. The flavor profile is light, sweet, and almost herby, making it a perfect spring and summer drink.

    This borage fizz works perfectly without any alcohol, but you can still easily add in 2-ounces of your favorite gin to make it alcoholic.

    Ingredients & adding alcohol

    Aquafaba or egg whites – You can use the liquid from a can of chickpeas, aquafaba, which is a vegan substitute for egg whites in recipes like this. If using egg whites, make sure to wash the egg in advance.

    Note: Consuming raw and lightly cooked eggs can lead to food-borne illness and is not recommended for those who are pregnant, elderly, or children. Please consult with your doctor before consuming.

    Borage simple syrup – This is a syrup made with 1 part water and 1 part sugar, infused with borage. You can use a regular simple syrup for this recipe or make your own borage simple syrup.

    Lemon juice – Use fresh lemons for this recipe.

    Sparkling water – You can use plain sparkling water or club soda for this.

    (Optional) gin - If you do want to make this cocktail alcoholic, you can add two ounces of your favorite gin.

    How to Make this Recipe

    Grab your shaker or jar, and you're ready to go! You'll be shaking the liquid vigorously so use a container with a tight top.

    Add the lemon juice, borage simple syrup, and aquafaba or egg whites to your shaker or jar. If you want to add in the optional gin, add it to these ingredients now.

    Tightly seal with a lid and shake it vigorously for about 15 seconds.

    Once it's shaken and all mixed up, add in a few ice cubes and seal again. Shake until the whole drink is completely chilled.

    Strain the mixture using a strainer or cocktail strainer into your favorite glass with some ice cubes and top up with sparkling water. Sip and enjoy your mocktail!

    Note: Mocktail in the photos is 2 servings in one glass. If making a double, only 2 tablespoons of aquafaba is necessary (similarly, just one egg white).

    • ¾ ounce borage simple syrup or sub regular simple syrup
    • 2 tablespoon aquafaba or 1 egg white
    • 2 ounces sparkling water or club soda, plus more to top

    Instructions

    • Add the lemon juice, borage simple syrup, and aquafaba or egg whites to your shaker or jar. If you want to add in the optional gin (2 ounces), add it to these ingredients now.
    • Tightly seal with a lid and shake it vigorously for about 15 seconds.
