This easy slow cooker chicken & rice is my new favorite leftovers meal. I’ll make a pot of this easy chaufa not for dinner, but to meal prep my lunches for the week. The beans and chicken add a mid-day protein kick, and the carbs in the rice mix give me the mid-day carbs I need!
Add the rice, chicken stock, onion, black beans, sesame oil, ginger, green chiles, soy sauce, garlic powder, cayenne pepper, paprika, and cumin to your slow cooker.
Stir well to mix.
Add the chicken breasts. Make sure they are submersed. Add the lid and set to low.
Cook on low until most of the liquid has been absorbed, ~5 hours. Remove the chicken breasts. Slice the chicken breasts and return back to the slow cooker. Cover, and turn on high for 20 more minutes.
