An easy roasted asparagus recipe you can use all spring and summer... I love roasting veggies when I have a chicken in the oven. I just throw them in during the last 15 minutes the chicken is cooking and they are ready to go in time for dinner.
Lightly drizzle with avocado oil (or spray with avocado oil spray), sprinkle with salt and pepper. Toss to evenly coat and spread them out evenly.
Roast 10, toss to rotate, and cook an additional 5-10 minutes until tender when poked with a fork. Cooking time depends on the thickness of the asparagus.
Notes
To trim your asparagus, hold the bottom end of one of your asparagus firmly. With your other hand, bend the asparagus until it snaps. Try this with two more asparagus. Trim the rest of your asparagus to the longest of your 3 test asparagus.Use avocado oil cooking spray for easy greasing!
