Ingredients
Dressing Ingredients:

olive oil

balsamic vinegar

teaspoon
honey
Salt and pepper
Fried goat cheese:
8-
oz.
goat cheese
½
cup
flour

egg
½
cup
ice water
Salt and pepper
For the salad:
8
cups
mixed greens
I used arugula and red leaf lettuce
6-8
fresh figs
halved

peaches
pitted and sliced
¼
cup
pistachios
Instructions
Cut the goat cheese log into 8 pieces. Roll each into a ball. Place on a sheet pan in the freezer for 10 minutes.
Heat 2 inches of oil to 375F.
Sift the flour into a bowl. In another bowl mix the egg, and ice water. Mix in the flour.
Dip the goat cheese balls in the batter and gently add to the oil. Turn occasionally until golden.
Whisk the dressing ingredients until emulsified.
Toss the greens with the dressing. Divide into 4 salad bowls. Top each with 2 tempura-fried goat cheese balls, figs, peaches, and pistachios. Enjoy!
