A vibrant blend of zesty lemon and cool mint, sweetened with a homemade whole-leaf syrup. Just three ingredients and five minutes to a refreshingly bright escape.
Start by making the mint simple syrup by blanching 1/2 cup of fresh mint leaves and blending it in simple syrup made with 1 cup of sugar and 1 cup of water. Then, strain through a fine mesh strainer. If you'd like more details, see the full mint simple syrup recipe here.

Notes
As a substitute for the mint simple syrup, use muddled fresh mint leaves and granulated sugar. Simple syrup dissolves much better into the lemonade than granulated sugar, so I highly recommend taking the time to make the mint simple syrup. You can amp up the mint flavor without adding more sweetener by adding muddled mint to the pitcher or glass, just like you would with a mojito.
