Mix the ingredients for the dressing. Dress the lettuce. Set aside.
Butter a non-stick pan over medium heat. Toast the bread slices on both sides until golden brown.
Add a little more butter to the pan. Fry the eggs to your preference. I like them over-easy to over-medium for this recipe.
Time to layer: On the toast goes the avocado, then the tomato, fried egg, dressed salad, and a sprinkle of salt and pepper.

Be generous with the butter to grease the pan and make flipping your eggs much easier. A great non-stick pan and a non-stick spatula also help to ensure no sticking or burning.Take your avocado toast to the next level by making a basil pesto for the base.
