Ingredients

  • large eggplants
  • carrots

  • fennel bulbs
  • 1 broccoli
  • scallions
  • jalapeños
  • 5 multi-colored beets
  • medium shallot
  • yellow onion
  • red onion
  • 22 cloves garlic
  • 1-1.5  lbs  small potatoes
  • inches  fresh ginger

Diary:

  • 1.5  cups  ricotta cheese
  • oz.  fresh mozzarella
  • 3/4  cup  parmesan
  • 12  oz.  goat cheese

Cans & Jars:

  • can chickpeas
  • tbsp  balsamic vinegar
  • tsp  Dijon mustard
  • fl oz. mirin
  • fl oz. soy sauce
  • tbsp  coconut aminos
