If making from scratch: Heat the olive oil in a pan over medium. Add the onion and bell pepper. Sauté for ~10 minutes until soft. Add the garlic, cumin, paprika, cayenne, and red pepper flakes. Sauté another 2-3 minutes until fragrant. Add the tomatoes. Bring to boil and simmer until thickened and much of the liquid is evaporated, 10-20 minutes, depending on your patience.
If using pre-made marinara: Heat the marinara in a pan over medium. Add the cumin, paprika, cayenne, and red pepper flakes. Bring to boil and simmer 5-10 minutes, depending on your patience.
Sprinkle with feta.
Gently crack the eggs into the tomato mixture.
Bake 10-15 minutes (depending on your oven) until the whites are no longer clear.
Sprinkle with parsley, top with avocado, and serve with hot sauce and bread!
