Tofu Summer Salad Rolls with strawberry dressing

WHAT YOU NEED

Strawberries  Balsamic vinegar Olive oil Lime juice  Basil Soy sauce Cashews Garlic Red pepper flakes Tofu Rice papers Cucumbers Spinach Avocado Purple cabbage Basil leaves and /or mint leaves

all dressing ingredients together.

BLEND

mixed dressing aside for use later.

SET

tofu to a saucepan. Cover with water. Bring to a boil. Boil for 2 minutes. Then, cut tofu into strips

ADD

your rice paper wrappers in a bowl of water, two at a time.

WET

from the water and place them on counter like a Venn diagram so they overlap  in the center.

REMOVE

base layer of spinach across middle of the wet rice paper wrappers. Add cabbage and tofu strips.

ADD 

with cucumber, strawberries,, avocado, and fresh herbs. Feel free to add other toppings you like!

TOP

by grabbing the rice paper wrapper closest to you and fold it tightly over the filling.

ROLL 

the left and right sides like a burrito. The wrapper will stick to itself. Keep rolling away from you until sealed.

FOLD

rolls in half to serve or enjoy as they are!
