Sweet Potato Wonton Ravioli with Tarragon Brown Butter Sauce

WHAT YOU NEED

sweet potato wonton or gyoza wrappers butter nutmeg cinnamon parmesan tarragon salt and pepper

sweet potatoes in oven for 40-50 mins. Make sure to poke them with a fork first

ROAST

roasted sweet potatoes with the skins peeled off until smooth. Taste your filling and season to your desired taste

BLEND

each wonton or gyoza wrapper with 2-3 teaspoons of filling

FILL

wrappers in half, and then press them firmly to seal the filling inside

FOLD

2 sticks of unsalted butter in a pan over medium heat to brown your butter

MELT

half of the fresh tarragon with stems into the butter. Season the sauce with salt and pepper to taste

STIR

strained ravioli in brown butter sauce over medium heat. Lightly coat and serve immediately with fresh tarragon for garnish
