Imbakbaka – Libyan Chicken Pasta  Dish

WHAT YOU NEED

chicken pasta oil yellow onion garlic tomato paste cayenne pepper coriander powder paprika

cumin ground cloves nutmeg cinnamon ground cardamom turmeric pepper salt jalapeños

PREP

The first step is to bring 5 cups of water to boil in a kettle or over the stove In the meantime, sauté diced or thinly sliced onion in canola oil over medium-high heat until translucent

Season chicken with the spices, including salt and pepper, and brown chicken all over

SEASON

garlic cloves, tomato paste, jalapeños, and boiling water or hot broth/stock. The chicken should be covered, so add more if necessary

ADD

raise heat to high, and bring broth to boil then immediately reduce broth to simmer and cook contents of the pot for 25-40 minutes until chicken is cooked through in the meantime, cook ditalini pasta until just short of al dente. Strain in colander until ready to use

RAISE

Bring pot with chicken back to a boil and add pasta. Heat pasta in the broth for 2-3 minutes just before serving

INFUSE

warm in a big bowl
