GHORMEH SABZI

PERSIAN BEEF & HERB STEW

parsley cilantro fenugreek scallions saffron (optional) lemon onion beef shouder dried limes kidney beans turmeric oil salt and pepper

WHAT YOU NEED

All the herbs and scallions. 

WASH & CHOP

in 2 tbsp canola oil for 5-10 minutes until wilted like sautéed greens. Set aside.

COOK THE HERBS

cook the onion until translucent, then add the beef, season with salt, pepper, and turmeric, and brown on all sides.

BROWN THE BEEF

4 cups hot water, the cooked herbs, washed and drained kidney beans, dried limes, & lemon juice.  Bring to a boil, then reduce to a simmer. –

ADD

the stew for two hours.

COOK

with basmati rice.
