Baghali Polo - Persian Dill Rice

WHAT YOU NEED

basmati rice lima/fava/broad beans dried dill  sea salt flavorless oil  saffron water

BRING

water to boil with added salt.  Wash rice 3-5 times with water until it runs clear. Add rice and frozen lima beans to boiling water and gently stir. Bring back to a boil. When rice is al dente, strain it

half the drained rice and lima beans to a pot. Top with the dill, then add rest of the rice and lima beans

ADD

make 6 deep holes in rice, then put lid back on pot. Cook on medium heat, watching it carefully

MAKE

a little oil over rice when pot lid gets foggy. Put lid back on and turn the heat to the lowest setting Cook 20-30 min from when the oil is poured on top

POUR

saffron, steep in hot water, and then add saffron and water over the top of rice

GRIND

entire mixture with a fork to mix ingredients
