Avocado Toast with Fried Egg

WHAT YOU NEED

ripe avocado bread tomato egg lettuce balsamic vinaigrette olive oil butter salt & pepper

Mix the balsamic vinegar, pickled mustard seeds (or Dijon), salt, pepper, and olive oil for the dressing.

PREP DRESSING

Pour dressing over lettuce and toss to coat.

TOSS LETTUCE

the tomato, and slice the avocado thinly.

SLICE

Butter a non-stick pan over medium heat. Toast bread slices for a few minutes on both sides until golden brown. Remove from pan.

TOAST BREAD

Add a little more butter to the pan. Fry the eggs to your preference - I like over-medium for this recipe.

FRY EGGS

top the toast with the sliced avocado.

ASSEMBLE

next add the tomato slice, and then the fried egg.

LAYER

top with the dressed lettuce and sprinkle with salt and pepper to your liking.
