You can use this recipe for really any vegetable. It’s a simple way to put a delicious dinner on the table. I love grilling veggies when I have something on the grill. Seems like a great way to utilize the grill being on.
- 2 large ears corn
- 4 vine or roma tomatoes
- 1 bunch asparagus
- Olive oil
- Salt and pepper
- Heat the grill.
- Lightly drizzle with olive oil, sprinkle with salt and pepper. Toss to evenly coat and spread them out evenly.
- Grill 10-20 minutes until tender when poked with a fork.
