Fig, Peach, and Arugula Salad with Tempura-Fried Goat Cheese and Pistachios

Ingredients
Dressing Ingredients:
- 3 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper
Fried goat cheese:
- 8- oz. goat cheese
- ½ cup flour
- 1 egg
- ½ cup ice water
- Salt and pepper
For the salad:
- 8 cups mixed greens I used arugula and red leaf lettuce
- 6-8 fresh figs halved
- 2 peaches pitted and sliced
- ¼ cup pistachios
Instructions
- Cut the goat cheese log into 8 pieces. Roll each into a ball. Place on a sheet pan in the freezer for 10 minutes.
- Heat 2 inches of oil to 375F.
- Sift the flour into a bowl. In another bowl mix the egg, and ice water. Mix in the flour.
- Dip the goat cheese balls in the batter and gently add to the oil. Turn occasionally until golden.
- Whisk the dressing ingredients until emulsified.
- Toss the greens with the dressing. Divide into 4 salad bowls. Top each with 2 tempura-fried goat cheese balls, figs, peaches, and pistachios. Enjoy!
