Ingredients
- 2 slices sourdough bread or any great bread
- 2 eggs fried
- 1 avocado thinlysliced
- 1 tomato sliced
- 1.5 cups lettuce or arugula
- salt and pepper to taste
- butter for frying, or oil
Simple Balsamic Dressing:
- 2 teaspoon balsamic vinaigrette
- 1 tablespoon olive oil
- 2 teaspoon pickled mustard seeds or ⅛ teaspoon Dijon mustard
- salt and pepper to taste
Instructions
- Mix the ingredients for the dressing. Dress the lettuce. Set aside.
- Butter a non-stick pan over medium heat. Toast the bread slices on both sides until golden brown.
